Easter 2011




I have a big family, and we love to get together to celebrate holidays and birthdays. Unfortunately, as all of my cousins get older, schedules get harder to coordinate and we often end up lumping a bunch of celebrations together, so we don't leave anyone out! That's exactly what happened with Easter this year! We celebrated Mother's Day, my Grandma Dee's 75th birthday and three of my cousin's birthdays along with Easter! I made cupcakes and a cake to bring to the big event.




These are lemon cupcakes with homemade lemon curd filling and raspberry swiss meringue buttercream made with fresh raspberries, YUM!







Knowing that I cannot show up to a family event without something chocolate, I made a devils food chocolate cake with chocolate mousse filling and vanilla swiss meringue buttercream frosting. I wanted the cake to be special since my Grandma turned 75 and I think it came out perfect, she LOVES roses!

Sandy's Retirement

I just recently started a new job for a wonderful company that has a lot of longevity among it's employees. On Friday April 1st, two longtime employees retired. Sandy worked at my sister's branch and they asked me to make cupcakes for her retirement party. Sandy was with the company for 31 years, so I was honored to be a part of her celebration!


In order to keep things simple and classy we went with a basic devils food chocolate cake with chocolate frosting and a basic vanilla cake with white chocolate cream cheese frosting. They were delicious!



Thanks for letting me be a part of your retirement party Sandy! Best wishes for lots of fun and relaxation, you will be missed!

Colleen turns 50!


One of my very best friends' moms turned 50 a few weeks ago! She has such an amazing family... they planned several "fake-out" parties to fool Colleen into thinking the celebrations were overwith, and then they hit her with the real surprise... a masquerade party with all of her friends and family!




When Erica asked me to make cupcakes and a cake for Colleen's party, I was THRILLED!

Chocolate!


A friend asked me to make some cupcakes for her best friend's birthday! She told me a few things about her... she is girly and she loves chocolate... ALL kinds!


I knew I wanted to combine dark and white chocolate. I decided to make dark chocolate cupcakes with chocolate mousse and white chocolate cream cheese frosting. They came out PERFCTLY! Yum!

Baby Shower

I recently made some mini cupcakes for a baby shower that a friend was throwing for one of her co-workers. My friend, Erica, chose a few of her favorite "girly" flavors for the event!


The first flavor on the menu were these little lemon cupcakes with raspberry buttercream... Yum!

She also requested pink champagne cupcakes with champagne buttercream, perfect for such a girly event!

I hope the mom-to-be had a lovely baby shower!

Candycane Cupcakes!


My aunt approached me during the holidays to ask if I would be willing to make cupcakes for her to sell at a Christmas Bazaar, where she was raising money for the Relay for Life. Auntie Edith has been a dedicated breast cancer awareness fundraiser for as long as I've known her, and spends more time raising money for those in need than anyone else I know. I was thrilled about the opportunity and when she suggested something "festive" i thought candy cane was perfect!


These cupcakes were a rich devils food chocolate cake with candy cane buttercream and a gum paste breast cancer ribbon!

Banana Nut

Wow! I have neglected to update this blog since our big move and the Holidays hit! I promise I have been baking up a storm! I guess sometimes life just gets busy!


At work we did a secret santa drawing, and for our final gift, I decided to give my lovely coworker Marla some cupcakes! Her choice of course! She decided on Banana Nut and said I could choose the frosting... Yummy!


I decided on a Banana Walnut cupcake with cinnamon and then a cinnamon cream cheese frosting, and it was delicious.
